Up to 1/3 of the food is wasted from farm to fork in the USA
The magnitude of this problem is increasing
since 2010 in the USA. The USDA* estimates that 30-40% of food is lost “from
farm to fork”. This amount corresponds to around 1.3 billion tonnes of food
per year. Where is this waste coming from?
The food waste exists in every step of the
supply chain. We identify three main stages: farm activities, retail and just, consumers. Going
deeper in this subject, fruit and vegetables represent the first “food group”
in terms of amount of wasted food and the 2nd one in terms of value
of wasted food according to the USDA.
The USDA’s goal is to cut it down to 50% by
2030.
Focusing in the farm level. The food waste can be
due to damages from insects or birds, problems during drying but also - and
what concerns us - spoilage and problems during processing.

The big challenge during harvesting is to crop all the fruit and vegetables in the adequate state of ripe and maintain this peak quality until the distribution to clients, while protecting them from infections and diseases. To overcome these challenges, two main solutions exist: to add chemicals in the production, or – the natural one – lowering down as fast as possible the temperature.

The heterogeneity in the process after harvest
is one of the main causes for food waste. Trying to reduce the temperature of
all the produces - even the ones located in the middle of pallets -, the cooling
process tends to be realized with too low temperatures. This severe cooling
results on having some fruit too ripened (in the middle of the pallet) while the
ones in the periphery freeze. These are two sources of food waste.
